I suspect that the final set was Murray wanting to get it done in 3, but not too quickly. He may well have eased off just a fraction to give him a little more of a workout?
As for his politeness - when you watch him going onto the court for the Gold Medal ceremony, (as I still do frequently...!!!), he pauses to shake hands with a lady wearing a tabard, who looks like a catering worker or something. Certainly not a VIP sort. I thought at the time it showed something about him, and his lack of pretentiousness.
