Very very ripe! A bit too ripe, actually. Was out of sugar and couldn't be bothered to go to tescos yesterday, so they were very mushy! I'm trying it with a darker sugar than normal, we shall see what occurs. Also added some tea-soaked raisins (sounds weird, but makes them nice and plump!)

Brown sugar will make the whole "loaf" darker, and raisins soaked in tea is the way to go. Whenever I make fruit bread, I soak the fruit overnight in tea/sugar combo - I also add about 3 glugs of Grand Marnier and you can really taste it when the whole thing is baked ........

I know the darker sugar will affect the colour - will it affect the taste?
I think you should share some recipes Daisy! I love trying new stuff and you seem to have awesome knowledge

I'm not sure how small a bottle of Grand Marnier you can buy - I use it for other things too ..... including fruit salad. I also glug in some Peach Schnapps into fruit salad which is just as good - and a bottle keeps for ever and ever.
The Grand Marnier adds a hint of orange to a Fruit Loaf and if you add in chopped peel as well, then you get a nice citrus taste - definitely not overpowering, just nice and delicate.
Brown sugar will give baking a more "caramel" taste ........ it can also make some things heavier, which might not be the desired end result.
I have oodles or recipes - most probably over 1000 - which I constantly use. I'm a start from scratch gal (every day) and it is my favourite hobby.

I think if you eat something like that hot/warm it always tastes sweeter than if you eat it cold with some butter.
