Well, we'll see. Right now, I'm ****** because I guess passport numbers change when you renew them and I can't buy a ticket until 2 months from now.

I still think there is some way around that. People who fly frequently wouldn't be able to wait that long.

You wouldn't be able to travel in the first place with a passport that is within 6 months of its renewal date... or that's the rules for leaving the EU I believe. Go ahead and book the flight, then phone up the airline when you have the new passport number and give it to them.
Carry both just in case.

You may only need to enter the passport details just before you go, we did when I went Spain.
