Not 'never lose' but they're certainly right more often than not.
Tennis is a hell of a lot more unpredictable than other sports though, due to the individual nature of the sport and various match-ups. You never know when someone's going to play the match of his life, or who's going to just not turn up. Then you have to factor in different surfaces and conditions. And then sometimes it's just hard to tell how good someone actually is (players hampered by injuries like Brian Baker or Hewitt, or younger players like Goffin and Janowicz who made massive ground last year). Some younger players are far better than their ranking, but just haven't realised their potential yet and will often 'spring an upset'.
Part of the reason why I love the sport so much.

The bookies usually never lose over everyone's bets on an event but you can have an individual edge over their odds, especially on a sport like tennis, if you are
very
knowledgeable about the sport and
very
good at knowing what outcomes to bet on. You basically need to have enough insight into your bets to give yourself back a statistical edge over the average odds deficits you're placing your bets on. Then even if do have an edge your margins will only ever be small which means you need to be placing large bets in order to accumulate any sort of decent gains, which in turn means you need to have the bankroll to cover very large variance swings - another problem for professional gamblers nowadays is a lot of betting sites start limiting the amount you can bet if you start taking decent profits against them.
